Banana Muffins

A classic quick bread made with ripe, browning bananas

Yield: 12 Muffins

| Total Time: | 25 minutes to prepare batter | 20-25 minutes to bake

Ingredients

  • 2 ripe bananas
  • 1 12 cups flour (225 grams)
  • 1 large egg
  • 6 tablespoons butter, melted
  • 34 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 12 to 1 cup walnuts, chopped (Optional)

Recipe Directions

Preparations

  • Preheat the oven to 350 degrees
  • Line muffin pan with paper liners.

Batter Preparation

  1. Mash 2 Bananas thouroughly in a large bowl
  2. Add 6 tablespoons of melted butter to the bananas and stir well
  3. Beat 1 large egg into the banana mixture
  4. Add 1 teaspoon of baking soda, 1 teaspoon of vanilla extract and a pinch of salt to the banana mixture and stir well
  5. Add 34 cup of white sugar to the banana mixture and stir well
  6. Gently add in 1 12 cups of flour (225 grams) to the banana mixture until just incorporated
  7. Optionally, fold 12 to 1 cups of chopped walnuts into the batter

Baking Instructions

  1. Fill muffin cups approximately 34 full
  2. Bake at 350 degrees for 20-25 minutes, until an inserted toothpick comes out clean
