A classic quick bread made with ripe, browning bananas

Ingredients
- 2 ripe bananas
- 1 1⁄2 cups flour (225 grams)
- 1 large egg
- 6 tablespoons butter, melted
- 3⁄4 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- pinch of salt
- 1⁄2 to 1 cup walnuts, chopped (Optional)

Preparations
- Preheat the oven to 350 degrees
- Line muffin pan with paper liners.
Batter Preparation
- Mash 2 Bananas thouroughly in a large bowl
- Add 6 tablespoons of melted butter to the bananas and stir well
- Beat 1 large egg into the banana mixture
- Add 1 teaspoon of baking soda, 1 teaspoon of vanilla extract and a pinch of salt to the banana mixture and stir well
- Add 3⁄4 cup of white sugar to the banana mixture and stir well
- Gently add in 1 1⁄2 cups of flour (225 grams) to the banana mixture until just incorporated
- Optionally, fold 1⁄2 to 1 cups of chopped walnuts into the batter
Baking Instructions
- Fill muffin cups approximately 3⁄4 full
- Bake at 350 degrees for 20-25 minutes, until an inserted toothpick comes out clean
