Coffee Cake: a delicious baked good that is not really a cake nor has any coffee in it. It is, however, quite tasty with a cup of coffee. This recipe is borrowed/adapted and turns out like the classic cinnamon coffee cake that comes to mind whenever anyone mentions “coffee cake.”

Ingredients
Cake
- 1 3⁄4 cup all-purpose flour (210 grams)
- 1 cup granulated sugar (200 grams)
- 1⁄4 teaspoon salt
- 2 teaspoons baking powder
- 1⁄4 cup unsalted butter cubed
- 1 large egg beaten
- 3⁄4 cup whole milk (184 grams)
- 1 teaspoon vanilla extract
Topping
- 2 teaspoons ground cinnamon
- 1⁄4 cup light brown sugar (55 grams)
Glaze
- 1 tablespoon water (15 grams)
- 6 tablespoons powdered sugar (52 grams)

Preparations
- Preheat the oven to 400 degrees
- Grease an 8x8” square baking pan
Cake
- In a large bowl, whisk together 1 3⁄4 cups of flour (210 grams), 1 cup of sugar (200 grams), 1⁄4 teaspoon of salt, and 2 teaspoons of baking powder
- Cut 1⁄4 cup of butter into the flour mixture until a coarse crumb forms
- Add in 1 large beaten egg, 3⁄4 cup of milk (184 grams), and 1 teaspoon of vanilla and mix gently until just combined
- The batter will be slightly lumpy
Cinnamon Crumb
- In a small bowl, mix together 2 teaspoons of cinnamon and 1⁄4 cup of brown sugar (55 grams)
- Reserve about 1⁄4 of the cinnamon sugar mixture and gently blend the rest of it into the cake batter to marble it
Cooking Instructions
- Pour the batter into the prepared baking pan
- Sprinkle the reserved cinnamon sugar mixture over the top of the cake evenly
- Bake for 30 to 35 minutes
Glaze the Coffee Cake
- Once the coffee cake is done, allow it to cool for 15 minutes
- While the coffee cake is cooling, add 1 tablespoon of water (15 grams) and 6 tablespoons of powdered sugar (52 grams) to a small bowl and whisk together until smooth
- Drizzle the sugar glaze over the cake after it’s been cooled
