A quick and easy breakfast, very similar to ‘pain perdu’. Sliced bread is dipped in an egg and milk mixture and then fried for a sweet breakfast, by itself or topped with fruit and creme.

Ingredients
- 6-8 slices of bread
- 2 eggs
- 1⁄4 cup milk
- 1 teaspoon sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- oil for frying

Preparation - Egg Mixture
- Break 2 eggs into a medium mixing bowl and whisk thoroughly.
- Whisk in 1⁄4 cup of milk, 1 teaspoon of sugar, 1 teaspoon of cinnamon and 1 teaspoon of vanilla
- Whisk well to blend all ingredients together
Cooking Instructions
- Heat skillet or griddle on medium heat
Add oil to the bottom of the heated skillet/griddle
- The size of the cookware will dictate how much oil to use, but make sure there is a thin coating across the surface
- The oil should not be hot enough to smoke or burn the bread, but enough to cook the bread to a golden brown
Dip slices of bread into cinnamon egg mixture, one side at a time to coat both sides
Place coated bread into prepared skillet and fry until golden brown, turning once to cook both sides.
Whisk mixture again after a few slices, if necessary
- Add more oil occasionally as the bread will soak up some of the oil
Notes
- Serve with syrup, honey, powdered sugar, fresh fruit, pie filling, creme and/or whipped cream.
- Homemade or sourdough bread is great to use, but the yield for the egg mixture will vary depending upon the size of the bread slices. Ideally, the bread should be firm or stale. Soft bread will become gooey once dipped into the egg mixture.
