Pasta E Fagioli

A slightly more American take on a traditional Italian soup, this “pasta and bean” soup has all the basic traditional elements with some non-traditional seasoning.

Yield: 6-8 bowls of soup

Recipe Ingredients

  • 12 ounces Italian sausage, bulk ground, sweet or mild
  • 1 medium onion, finely chopped
  • 2 medium carrots, peeled and finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 2 15 ounce cans Great Northern Beans
  • 1 15 ounce can diced tomatoes
  • 1 12 to 2 cups of small shaped pasta, uncooked (ditalini, macaroni, campanelle, casarecce, etc.)
  • 4 cups chicken stock or broth
  • 2-4 tablespoons Parmesan cheese, grated
  • 1 12 teaspoon tarragon
  • 1 teaspoon black pepper, ground
  • 1 teaspoon rosemary, dried and slightly ground
  • 12 teaspoon coriander seeds, ground
  • 12 teaspoon salt
  • Additional Parmesan cheese, grated, for table garnish
  • Freshly chopped or dried parsley, for table garnish
  • Olive oil for sausage and vegetable saute

Recipe Directions

Saute Sausage and Vegetables

  1. Heat olive oil in a large, deep pot over medium heat.
  2. Add 12 ounces of ground Italian sausage and cook until done. Break up chuncks with a wooden spoon.
  3. While sausage is cooking, chop 1 onion, 2 carrots, 2 stalks of celery and 3 cloves of garlic
  4. Lower heat, add chopped vegegalbes to pot and cook until tender.
  5. Stir in 3 cloves of chopped garlic and cook until the garlic is aromatic

Make the Soup

  1. Add 2 cans of Great Northern Beans, 1 can of diced tomatoes and 4 cups of chicken stock or broth.
  2. Add 1 12 teaspoon of tarragon, 1 teaspoon of ground black pepper, 1 teaspoon of rosemary (slightly ground ahead of time), 12 teaspoon of ground coriander seeds and 12 teaspoon salt to the soup mixture.
  3. Bring soup mixture to a boil.
  4. Taste soup mixture and adjust seasoning if necessary.
  5. Stir in 1 12 to 2 cups of uncooked pasta
  6. Reduce heat to medium, cover and cook until pasta is al dente.
    1. Cooking time will depend upon the type of pasta use. Approximate time is about 15 to 20 minutes.
    2. The liquid in the soup should cover the pasta completely. If necessary, add additional chicken stock or water.
  7. Remove from heat and add 2-4 tablespoons of grated parmesan.
  8. Serve with grated parmesan and parsley as a table garnish.
